Hubby and I were set to bbq pork chops tonight and I wanted something apple-based to go along with it. Apple sauce seemed boring and I wanted to try something. This was my creation. I call it a jam but it is only slightly sweet and full of delicious flavours! Hope you like it. As always, I used all organic ingredients but this is only a personal choice. Do try to buy the best fuel for your body! Oh and if you're a Whole30 warrior, just omit the maple syrup!
4 apples, grated
1 red onion, finely minced
6 slices natural bacon, thinly sliced (lardons)
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1 tablespoon apple cider vinegar
1 tablespoon maple syrup (strictly optional! Still amazing without it!)
2 cups organic apple juice
Sea salt, to taste
1. Sauté bacon pieces, over medium high heat, until slightly crispy. Add in onion.
2. Once onion is translucent, add in apples and in salt, pepper, and garlic pepper.
3. Sauté for 2-3 minutes. Add in apple juice, ACV, and maple syrup(if using).
4. Reduce heat to low and simmer until it is the consistency of jam!
