Coffee Creamer Extravaganza!

So, I'm not a big coffee drinker but my hubby could main line it straight into his veins! And he just can't drink it black. When we moved from Ontario, and lost our beloved organic creamery, we went dairy-free. Since then, he has done a lot of complaining about not liking almond, cashew, and coconut milk in his coffee. I finally found a commercial coconut milk creamer that he liked, but I just hated buying pre-made junk that's full of stabilizers. Since I already make my own coconut milk, I figured I would try my hand at homemade creamer.

OMG, guys... I do believe the quote goes something like "angel tinkling on your tongue" (but it uses more colourful language). They are amazing!!! I made two flavours. The procedure is the same for both. You can omit the sweetner and the are still delish! Let me know what you think!

Maple Vanilla Creamer Ingredients:

3 cups coconut milk (or cashew/almond milk)

1/4 cup organic maple syrup ( If omitting sweetner, add 1 teaspoon maple extract)

1 vanilla bean, seeds scraped out. (Add the outer bean to your vanilla extract! We will only be using the seeds!)

Pinch of sea salt

Salted Caramel Mocha Ingredients:

3 cups of coconut milk (or almond/cashew milk)

1/4 cup coconut sugar (optional)

1/4 teaspoon vanilla extract

1 tablespoon cocoa powder

Pinch of sea salt

Procedure:

1. Place all ingredients into blender and blend until smooth!

2. Pour into glass vessel.

3. You're done!! Enjoy!

Pemmican Burgers

Okay, these aren't a pemmican substitute, but they have some of the delicious flavours that pemmican can bring to your table. If you're new to pemmican, it is dried ground up meat that has been mixed with melted fat. It usually has some dried berries in for good measure. These burgers are made with bison meat and have coconut oil and cranberries thrown in for flavour. So yummy! Let me know what you think!



Ingredients:



1 lb pastured ground bison meat

1/2 cup dried cranberries (blueberries would be a delicious option!)

1 tablespoon coconut oil

1/2 teaspoon dried thyme

1/2 tablespoon coconut flour

1/4 teaspoon black pepper

1/2 teaspoon onion and garlic powder

1/2 teaspoon sea salt



1. Mix all ingredients together. I switch between using my hands and using my KitchenAid mixer. Depends on the day! Just make sure everything is mixed thoroughly!

2. Form into four patties and grill until desired doneness!

3. Enjoy! I paired ours with tri-coloured carrots and sweet potato chips! Yum!

Apple Bacon Jam

a.k.a....porky, apple-y, goodness! Hubby and I have been off the grid for the first part of the year. We have moved again, this time for the better!!! We bought a big, beautiful house on a golf course. Loving my new kitchen!

Hubby and I were set to bbq pork chops tonight and I wanted something apple-based to go along with it. Apple sauce seemed boring and I wanted to try something. This was my creation. I call it a jam but it is only slightly sweet and full of delicious flavours! Hope you like it. As always, I used all organic ingredients but this is only a personal choice. Do try to buy the best fuel for your body! Oh and if you're a Whole30 warrior, just omit the maple syrup!

Ingredients:

4 apples, grated

1 red onion, finely minced

6 slices natural bacon, thinly sliced (lardons)

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

1 tablespoon apple cider vinegar

1 tablespoon maple syrup (strictly optional! Still amazing without it!)

2 cups organic apple juice

Sea salt, to taste

1. Sauté bacon pieces, over medium high heat, until slightly crispy. Add in onion.

2. Once onion is translucent, add in apples and in salt, pepper, and garlic pepper.

3. Sauté for 2-3 minutes. Add in apple juice, ACV, and maple syrup(if using).

4. Reduce heat to low and simmer until it is the consistency of jam!

5. Enjoy!
