Told you to there would be more strawberry recipes coming your way! This happens to be in the form of a strawberry frozen yogurt! It is deliciously sweet, with the creaminess of the coconut milk and the sling tang offered from our grass-fed yogurt and fresh lemon zest/juice. I'm telling you....this is something you want in your mouth!
So, this is what you will need:
4 cups of fresh strawberries
1 1/2 cups yogurt (mine is grass-fed but feel free to sub in coconut yogurt for a dairy-free option)
1/2 cup coconut milk (just the cream from the top of the can! You could also sub in cow's/goat/almond milk for this!)
Pinch of salt
Sweetener of choice (This is optional! If don't want to add any sweetener, I would add a couple really ripe bananas. If using actual sweetner, start with a 1/4 cup and taste until it's to your liking. I used raw honey!)
1/4 cup lemon juice
Zest of 1 small lemon
Once you have everything out, you're ready to start!
1. Pop everything in your blender and blend until smooth. I usually will grab my ice cream insert while it is blending and assemble my ice cream maker.
2. Pour your mix into your ice cream maker and process as per the manufacturers directions. Mine took about 20 minutes. Look at that Cuisinart go!
3. Once your frozen yogurt is done in the ice cream maker, you can totally eat it! If you want a firmer texture, feel free to freeze for another hour or so!
4. Enjoy!! You're going to love it!
P.S. How cute is that bowl?? It's actually a teacup to this crazy expensive tea set my mom bought us! That right there....is a $72 tea cup! Ridiculous! But I thought it was a cute vessel for this delicious fro-yo!
We LOVE a good Caesar salad in our house!! This week's was made using my favourite easy dressing and red romaine lettuce that was fresh from the farmer's market! Delish!
So, like I said, this dressing is super easy and it's very versatile as well. Doing Whole 30? Leave out the Parmesan! Dairy-free but want that cheesy taste? Sub the Parmesan for nutritional yeast! It's delicious all ways!
Give it a try and let me know what you think!!
1 cup of Paleo mayo
2-3 cloves of garlic
1.5 teaspoons of anchovy paste
1 teaspoon coconut aminos
1 teaspoon Dijon Mustard
2 tablespoons of fresh lemon juice (this was from one half but depends how juicy your lemons are)
1/4 cup grated Parmesan (optional and can sub in nutritional yeast)
1/3 teaspoon ground black pepper
1/4 teaspoon of salt
1. Add everything into the blender and blend until smooth. I love my magic bullet for this!
2. Dress clean, dry romaine and add in bacon and more Parm for an amazing primal salad! Or use it as a dip for chicken or veggies. Yum!
Strawberry season is upon us!!!! Thank you summer!! I was out with hubby yesterday doing our "market tour" yesterday. I've talked about our "market tours" before and I will be doing an updated blog about our favourite natural foods sources in our new province! If you are new to my "market tour" lingo, let me explain!
I don't grocery shop.
99% of the time I do not have the need to step into a grocery store. I find most of our eats at local farms and markets and prefer avoiding all the processed garbage and inflated prices found within a grocery store! And maaaan did I find some strawberries yesterday!!
We found ourselves at an open-air French market in the heart of our city. This market is lively, and lovely, and I heart everything about it! Well...except the panic attack I had in line when a spider started crawling on my chest and I had my arms full of produce. A good laugh was had by all patrons (not so much me!)!
Okay, back to the strawberries! This amazing market had local strawberries on for $9.99 a box!!! They are regular twice that price!!! Which obviously meant I should by twice as much right?? All I tell you is that you should strap yourself in because strawberry recipes will be coming at you like CRAZY!!
Which brings me to these amazing frozen treats!! Some of the strawberries were so ripe that they needed to be dealt with ASAP! And it's hot! And who doesn't like Popsicles??
They are creamy, tangy, and oh-so refreshing! I love the pop that the lime adds to the deliciously fresh strawberries!
Let me know what you think!!
2 cups fresh strawberries
1 can of coconut milk (just the cream on top! save the water for smoothies!)
Zest of 1/2 lime
2 tablespoons fresh lime juice
Paleo Sweetener of choice (Honey would be a good choice. This is optional and to taste! Start with a teaspoon and taste as you go!)
1. Add everything into the blender and blend until smooth!
2. Pour into Popsicle mold, pop in the handles, and freeze for 4-6 hours until hard!
3. To release from mold, run briefly under hot water!
