Okay. Okay. I'm back and all I can say is this is an amazing side. My hubby (the hater of most things cauliflower) even gave it two thumbs WAY up. So here's the thing, you can make two versions of this so your biggest question is whether to potato or notato! So let's get started: Notato Ingredients: 1 head of cauliflower, cooked and mashed 1/4 cup coconut cream 1/4 cup Paleo mayo 1/2 tsp salt, pepper, & garlic powder 4 scallions, chopped 6 slices of bacon, cooked and crumbled 1 egg 1 cup cheddar cheese, grated (or try nutritional yeast to keep it dairy free) Potato Ingredients: 3 small potatoes, peeled, baked, mashed 1 head of cauliflower, cooked and mashed 1/2 cup Paleo mayo 1/2 cup coconut cream 1/2 tsp salt, pepper, and garlic powder 4 scallions, chopped 6 slices of bacon, cooked and crumbled 1 cup of grated cheddar. 1. Combine all ingredients (whether doing Notato or potato), except the cheese, in a large bowl and mash throughly to combine. 2. Preheat oven to 400F and then lightly grease a casserole dish (6 cup size). 3. Stir in 1/2 of the cheese to the mixture and then transfer mixture into casserole dish. Top with cheese. 4. Bake in oven until cheese is bubbly and golden brown. Enjoy!
