Okay, these aren't a pemmican substitute, but they have some of the delicious flavours that pemmican can bring to your table. If you're new to pemmican, it is dried ground up meat that has been mixed with melted fat. It usually has some dried berries in for good measure. These burgers are made with bison meat and have coconut oil and cranberries thrown in for flavour. So yummy! Let me know what you think!
Ingredients: 1 lb pastured ground bison meat 1/2 cup dried cranberries (blueberries would be a delicious option!) 1 tablespoon coconut oil 1/2 teaspoon dried thyme 1/2 tablespoon coconut flour 1/4 teaspoon black pepper 1/2 teaspoon onion and garlic powder 1/2 teaspoon sea salt 1. Mix all ingredients together. I switch between using my hands and using my KitchenAid mixer. Depends on the day! Just make sure everything is mixed thoroughly! 2. Form into four patties and grill until desired doneness! 3. Enjoy! I paired ours with tri-coloured carrots and sweet potato chips! Yum!
