Strawberry season is upon us!!!! Thank you summer!! I was out with hubby yesterday doing our "market tour" yesterday. I've talked about our "market tours" before and I will be doing an updated blog about our favourite natural foods sources in our new province! If you are new to my "market tour" lingo, let me explain! I don't grocery shop. 99% of the time I do not have the need to step into a grocery store. I find most of our eats at local farms and markets and prefer avoiding all the processed garbage and inflated prices found within a grocery store! And maaaan did I find some strawberries yesterday!! We found ourselves at an open-air French market in the heart of our city. This market is lively, and lovely, and I heart everything about it! Well...except the panic attack I had in line when a spider started crawling on my chest and I had my arms full of produce. A good laugh was had by all patrons (not so much me!)! Okay, back to the strawberries! This amazing market had local strawberries on for $9.99 a box!!! They are regular twice that price!!! Which obviously meant I should by twice as much right?? All I tell you is that you should strap yourself in because strawberry recipes will be coming at you like CRAZY!! Which brings me to these amazing frozen treats!! Some of the strawberries were so ripe that they needed to be dealt with ASAP! And it's hot! And who doesn't like Popsicles?? They are creamy, tangy, and oh-so refreshing! I love the pop that the lime adds to the deliciously fresh strawberries! Let me know what you think!! Ingredients: 2 cups fresh strawberries 1 can of coconut milk (just the cream on top! save the water for smoothies!) Zest of 1/2 lime 2 tablespoons fresh lime juice Paleo Sweetener of choice (Honey would be a good choice. This is optional and to taste! Start with a teaspoon and taste as you go!) 1. Add everything into the blender and blend until smooth! 2. Pour into Popsicle mold, pop in the handles, and freeze for 4-6 hours until hard! 3. To release from mold, run briefly under hot water! 4. Enjoy!
